I like eggplant- So What! Chicken Eggplant Parm!!
Want to enjoy and Italian-like recipe at home and it's so simple, your toddler could do it? As I have mentioned, I am no cook, but LOVE eating.. The only problem is my waistline does not always agree. With a little improvising and creativity, I was able to give my taste buds a treat without killing my figure.

Eggplant Chicken Parm
What you need:
Preheat oven to 450 degrees
1 egg plant washed and sliced into 1/2 in slices
Brush olive oil over eggplant slices and place on foiled baking sheet
Sprinkle garlic powder, salt, pepper, and parmasean cheese over the top
Bake for 15-20 min or until cheese is browned.

Grill or bake a couple large chicken breasts (google how to cook chicken breast if you don't know how). Separate about 4 oz and slice the breast in half.

Cover chicken breast with 1 tbsp of marinara of your choice and microwave so sauce is hot.

Once the eggplant is done, place one slice of eggplant parm under chicken and one on top of the sauce to form a sandwich.

Wallah!! So yummy and still pretty healthy :)
